I have to agree with Ian. All servers are generally configured to be remotely controlled, allowing the remote mouse/touchpad/keyboard to be used. No need for extra components connected to the server outside of initial setup. Besides, having a mouse/keyboard connected to it draws undesired public attention. Go with a headless server which will remain inconspicuous. Only connect peripherals to it when absolutely needed.

So? This is a server. It's only going to be administered at the console very rarely, if ever. You really only need the keyboard and monitor to do the initial install. And it's not like a server has a graphical interface in the first place. The only reason anyone would *ever* need to be using the physical keyboard at the server console is if something is very wrong.
When things go very wrong, and you are trying to fix it, the last thing you need is to have to try to find a keyboard/display/mouse that fits and works. You want to be able to slide the tray out and be able to start work, not to be getting raised blood pressure and palpitations.
I know the system isn't perhaps critical, but seeing something not working in a computer museum perhaps leaves a bad impression...
