This varies a lot between people. I normally replace only what needs to be replaced though there are a few parts I replace preventative such as some oil filled capacitors. Some recent fun with dipped tantalum is making me wonder about them. I try to replace components with similar looking but don't try to match date codes or brands. I will use what works if better match too difficult. I only do cosmetic restoration if its ugly. If it just looks used I normally leave it alone.
