I have to agree with Ian. All servers are generally configured to be remotely controlled, allowing the remote mouse/touchpad/keyboard to be used. No need for extra components connected to the server outside of initial setup. Besides, having a mouse/keyboard connected to it draws undesired public attention. Go with a headless server which will remain inconspicuous. Only connect peripherals to it when absolutely needed. So? This is a server. It's only going to be administered at the console very rarely, if ever. You really only need the keyboard and monitor to do the initial install. And it's not like a server has a graphical interface in the first place. The only reason anyone would *ever* need to be using the physical keyboard at the server console is if something is very wrong.
