Most of the stuff out there for analog capture at this point is pretty junk from what I have seen. Especially for composite video. You will get a pretty bad picture. 

I would look for a used panasonic dvd recorder deck that has hdmi output and capture from that. Those also have component output too.  Decent scaler and comb filter. They were made for capturing vhs and tv broadcasts of the NTSC variety. 

It's a little known secret for playing video games and laser discs on modern sets.
