We have an Atari STe running midi composition software paired with a Yamaha CBC-T3 general midi module. It does the job, but we don't have a midi keyboard for entering midi notes, some have been offered, but if the prospect of an Ensonic keyboard to do both keyboard entry and sound generation would be enticing. Currently have an Ensoniq ASR-10 in the queue to restore but that isn't ideal for your application.
Since I post "wanted broken synths" type posts on Craigslist and get leads sometimes, I will keep VCF in mind should another one come along. One thing that is odd, like 70% so far has been Ensoniq hardware.
The Mirage is fairly common and still pretty cheap, it is a "gritty" sampler. It doesn't really do the general midi patch layout though, maybe something made by Ensoniq that does general midi would be better for demonstrations.
The Roland MT-32 tone module gets the game geeks all excited. I recommend one of those in addition to something from Ensoniq.
