Once you get it like you like it, make a backup so you don't have to
rebuild your Pi all over again. I have a library of various builds that I
have created or downloaded.  Using the GUI to get up and running is a
timesaver anyway; installing SSH, wireless networking, USB to serial
terminal, etc. can all be done using the GUI
