Hey Mike, I'm fairly familiar with Amiga 2000s. I've got a pair with a
number of fun enhancements. Here's a couple quick answers to your Qs but
I'd be happy to discuss further.

Although the A1000 requires both kickstart and workbench floppies the A2000
has kickstart resident in ROM so you would only need the Workbench floppies.
Depending on the ROM in your 2000, you may be able to use up to Workbench
3.1 which has some benefits.

One way I got started with my first Amiga with no software on hand was to
use a Gotek floppy emulator flashed for Amiga use. From there you can boot
the loaded images and copy them to real disks if desired.

Unfortunately the keyboard protocols are entirely different from AT
standards, you will need to acquire either an adapter from AT to Amiga
(google the Lyra adapter) or find an actual Amiga keyboard.
