Do it however you like. Just sharing my experience, as another steering committee member recently reached out to me and requested I do more.

I felt responsible for exhibitor's stuff. I did not want to make them choose one or the other. Easy answer, separate schedules, with the museum(s) and other attractions open, so attendees who did not want to attend the keynotes still had something to do.
